These are great tasty comfort food that you don’t even need a knife and fork for!

You will need:
(To feed 4)

4 crispy bread rolls (preferably sourdough or ciabatta)
1 lb/450g good sausages such as steak & pepper or pork and spring onion etc.

3 red onions
3 tbsp soft brown sugar
3 tbsp butter
Splash of cider or wine vinegar
Tabasco (optional)
Salt & pepper to taste

2 parts mayonnaise
1 part wholegrain mustard
Drizzle of honey
Dijon mustard to taste

1. Slice the onions into medium fine strips and fry in the butter with a little oil to prevent burning the butter. Allow to soften on a medium heat for around 5 minutes before adding the sugar, salt & pepper. Allow to caramelise for another 5 mins before adding the vinegar and Tabasco, give another 5 mins stirring occasionally.
2. Warm the rolls in the oven if desired.
3. Fry the sausages in a medium heat pan until cooked
4. Mix up the mustard mayo in a dish and slather onto the rolls, add the sausages and top with the caramelised onions. Enjoy!
